H&W head brewer

Tim Morris, is a Real Dorset Character, although he was raised in Yorkshire, he has become an honorary resident of Dorset, and is regularly seen on the golf courses of the county.

Tim Morris, or as we call him “The Doc” has been the Head Brewer at Hall & Woodhouse since 2000. Tim has been instrumental in helping us create a classic county ale – Badger First Gold.

Tim has also been Chairman of the Institute of Brewing Flavour Group, a member of the Institute of Brewing Analysis Committee, and a member of the Brewing Research International Analysis and Services Advisory Panel; he has also given many lectures, and published lots of papers on brewing. So when it comes to brewing the perfect pint with Real Character, he knows what he is talking about!

Some people say that Tim has the perfect job, as our Head Brewer he develops great Badger ales, obviously has to taste them, has to regularly check that they meet our stringent high standards (which involves a lot of tasting), and he decides how much we should brew – not bad for a day’s work!
